Ingredients
3 jars (125g each) of plain yoghurt
1 grated apple (without peel)
4 eggs, beaten
4 tablespoons cornstarch (optional)
3 tablespoons stevia sweetener (or 6 tablespoons regular sugar)
1 grated lemon zest
1 teaspoon vanilla essence
½ lemon juice
Note: If you are using a different type of sweetener, calculate the correct amount based on the amount of sugar listed.
Preparation
- To begin, separate the egg whites from the yolks, add 4 tablespoons of sweetener (or sugar to the latter) and beat with electric whisks.
- When the mixture is clear and foamy, add the vanilla essence, the lemon zest and the yogurt and mix well with a hand whisk.
- Now beat the egg whites with an electric whisk and when they become foamy, add the lemon juice and 2 tablespoons of liquid sweetener (or sugar).
- Now add the cornstarch to the egg mixture, mix, add the egg whites, mix with a spatula and add the grated apple.
- Once this is done, line a 20×20 cm square pan with special paper, transfer the dough and flatten it.
- Finally, bake in a preheated oven for 40 minutes at a temperature of 180°C. At the end, sprinkle with a little icing sugar and serve.
