Strawberry jam muffins recipe

Preparation time: 15 minutes
Cooking time: 20 minutes
Total time: 35 minutes
Servings: 8 muffins
Calories: 160 per muffin

Ingredients

200 gr strawberry jam with no added sugar
180 gr of 00 flour
50 ml oil
25 gr stevia sweetener (or alternatively 50 gr regular sugar)
4 gr of baking powder
1 egg
1 grated lemon peel
Just enough powdered sugar

Preparation

  1. First break the egg into a bowl, add the stevia sweetener (or sugar) and grated lemon zest, then mix with a hand whisk.
  2. Now add the oil, mix, add the flour together with the baking powder and knead with your hands so that you get a smooth, soft and firm shortcrust pastry.
  3. Now line a muffin mold with paper ramekins, fill them all with a ball of shortcrust pastry, flatten it to spread it and give it the shape of the ramekin, fill with strawberry jam in the center and close by grating the leftover shortcrust pastry mixture on top.
  4. Finally bake in a preheated oven for 20 minutes at a temperature of 180°C, when finished remove the muffins from the ramekins and dust with a little powdered sugar if desired.

Of course you can choose another jam to your taste!
