How to make sugar free mandarin marmalade
- 1 kg fresh mandarins
- Lemon juice (optional, to increase acidity)
- Waterfall
Instructions:
Preparation of the tangerines: Wash the tangerines carefully under running water. Peel and separate the segments. Remove the seeds and the white pith, which can give a bitter taste to the jam.
To cook the mandarins: Place the mandarin segments in a large saucepan. Add just enough water to cover them. Bring to a boil, then reduce the heat and cook over medium-low heat for about 30-40 minutes, or until the mandarins are soft.
Blend the mandarins: Once the mandarins are cooked, use an immersion blender to blend until smooth. If you prefer a more rustic texture, you can mash the mandarin segments with a fork instead of blending them.
Adjust the flavor: At this point, you can add a little lemon juice if you want to increase the acidity of the marmalade. Taste and adjust if necessary.
Final cooking : Return the pan to the heat and cook over medium-low heat, stirring occasionally, until the jam reaches the desired consistency, about 15-20 minutes. Remember that it will continue to thicken as it cools, so don’t overcook it.
Storage: Pour the hot jam into sterilized jars and seal them hermetically. Allow to cool to room temperature and store in the refrigerator. Best use within a couple of weeks.
