Ingredients

2 cups of flour (about 400 g of flour)
½ cup of milk
½ cup of seed oil
60 gr stevia sweetener (or alternatively ½ cup sugar)
16 gr baking powder
6 mandarins
4 eggs
1 teaspoon vanilla powder

Preparation

  1. First, peel the mandarins, cut them in half, lay them spacing them apart on a large glass baking dish and set them aside.
  2. Now break the eggs into a bowl, add the stevia sweetener (or sugar) and vanilla, then mix with a hand whisk to make a frothy mixture.
  3. Now add the oil a little at a time as you mix, insert the milk, stir, slowly incorporate the flour and stir to reabsorb it, then incorporate the baking powder and resume working.
  4. Once you have a smooth, velvety and homogeneous dough, pour it into the mandarin size and level it well.
  5. Finally put to bake in a preheated oven for 45 minutes at a temperature of 180°C, when finished all you have to do is remove the cake from the mold and serve it.
