Greek yogurt cake recipe: good, super easy and super light!

Ingredients
- 4 eggs
- 3 cups of white Greek yogurt (125 g each)
- 3 tablespoons stevia sweetener (or alternatively 6 tablespoons regular sugar)
- 1 grated lemon peel (optional)
- 1 pinch of salt
- ½ lemon juice (optional)
- Just enough powdered sugar
Preparation
- To start, separate the egg whites from the yolks, add 2 tablespoons of stevia sweetener (or 4 tablespoons of sugar) to the yolks and beat them with electric whips for 2 to 3 minutes so that their volume doubles.
- Now add the grated lemon peel and white Greek yogurt to the yolks, stir with a spatula to bind the ingredients together and set aside for a moment.
- Now whip the egg whites together with a pinch of salt for 5 minutes with electric whips, when the consistency becomes meringue-like insert the lemon juice and 1 tablespoon of stevia sweetener (or 2 of sugar).
- Having done this, gently incorporate two tablespoons of egg whites into the yolks, mix, after which do the reverse and incorporate the yolk mixture into the bowl of egg whites and mix gently..
- Pour the mixture into a round mold 20 centimeters large lined with special paper, stir it with a toothpick, then lay the mold in a rectangular glass baking dish filled with 2 centimeters of boiling water.
- Finally, put to bake inside the preheated oven for 30 minutes at a temperature of 160°C, when finished turn down to 140°C and continue baking for another 10 minutes. Finally, let the cake rest for 10 minutes with the oven off.
- When baked, dust the cake with powdered sugar and serve.
