Ingredients

2 eggplants
120 g cooked meat cut into slices
100 g Galbanino light cut into slices
A few spoonfuls of extra virgin olive oil
A few spoonfuls of grated cheese
A few spoonfuls of breadcrumbs
Just enough paprika
Just enough oregano
Just enough salt

Preparation

  1. First clean the eggplants, cut them (lengthwise) into slices about 1 cm thick, place them on a hot plate and grill them well on both sides.
  2. Place the grilled eggplants on a plate, season with salt and leave to cool.
  3. Pour a few spoonfuls of oil in a small bowl, add the oregano and the paprika, mix well and use the mixture to coat the aubergines lightly (only on the surface).
  4. At this point, stuff them with a slice of sliced Galbanino and a slice of cooked meat, roll them up and fix them with a toothpick.
  5. Grease an ovenproof dish, place the rolls on top and sprinkle with breadcrumbs and grated Parmesan.
  6. Bake in a preheated oven at 180°C for 10 minutes, then sit down at the table and enjoy your meal.
