3 Ripe Avocados
Juice of a lime
½ cup of chopped onion
1 or 2 crushed garlic cloves
2 tablespoons of chopped coriander
Salt to taste
Chopped tomatoes in cubes (optional)

  1. Cut avocados in half. With a spoon, remove the flesh of the avocado and put it in a bowl;
  2. Add lime juice and, with the help of a fork, crush it until you get a puree;
  3. Add the chopped onion, crushed garlic, chopped coriander, tomatoes and salt to taste;
  4. Stir well to integrate the ingredients.

2- Cream of zucchini soup

150 g of zucchini
60 g of onion
80 g of leek
65 g goat cheese
2 tablespoons of olive oil
Salt to taste

  1. Clean and peel leeks and onions;
  2. Cut leeks into slices and onions into small pieces;
  3. Put them in a pot with a pinch of salt to prevent them from releasing more water;
  4. When they are soft, add the zucchini;
  5. Cover all the ingredients with water and let them cook until they are all soft;

2 tablespoons of coconut oil
40 g cashew nuts
60 g of onion
1 clove of garlic
200 g chicken breast

  1. Cut the chicken into cubes, onion into julienne and garlic into slices;
  2. Fry the onion and garlic in a pan with the coconut oil for a few minutes;
  3. Add the chicken and, when this one takes color, incorporate cashews;

175 g of chicken
30 g of butter
40 g orange juice
1 cinnamon stick

  1. Pr-heat the oven to 180ºC. Brush a dish with butter and put the chicken in it;
  2. Paint the chicken with a little butter, add salt and pepper and pour the liquid from the marinade over it;
  3. Let it cook for about twenty minutes until the chicken is tender and golden. To prevent it from drying out, gradually sprinkle the same juice over it.

5- Baked sardines recipe

Preparation time:45 minutes

Ingredients

200 g of sardines
1 tablespoon of extra virgin olive oil
Salt to taste

  1. Preheat the oven to 220ºC;
  2. Place a layer of coarse salt on the baking tray and place the sardines on top;
  3. Bake for 20 minutes (after 10 minutes turn the sardine to make it on both sides)
  4. Serve with a splash of olive oil on top.

Preparation time: 20 minutes

Ingredients

1 tablespoon of extra virgin olive oil
½ lime
40 g of avocado
20 g of spring onion
15 g Dijon mustard
2 tablespoons of sherry vinegar
60 g of tomato
150 g of salmon

Preparation

  1. Slice the salmon into small cubes of about 1 cm;
  2. Grate the peel of half a lime on the tuna and add a little salt and pepper;
  3. In a bowl prepare the vinaigrette with olive oil, sherry vinegar and mustard, and shake to emulsify well;
  4. Wash the tomato with water and cut it into cubes similar to salmon. Do the same with the avocado;
  5. Add the vinaigrette to the salmon and let it marinate for a few minutes;
    Chop the chives and mix them with the tomato, avocado and salmon to serve.
