Ingredients

  • 500 ml of orange juice
  • 60 g of corn starch
  • 40 g of stevia sweetener (or alternatively 80 g of sugar, maltitol or erythritol)
  • 1 teaspoon orange essence (optional)
  • a drizzle of oil for the mold

Preparation

  1. To start, take a fairly large round glass cup, brush it well with a drizzle of seed oil and keep it aside for the moment.
  2. Now start preparing the cake by inserting the sweetener stevia (or sugar, maltitol or erythritol) into a pan, add the corn starch and orange juice and mix well with a hand whisk.
  3. Now add the orange essence, mix, turn on the stove and, stirring continuously with the whisk, let it thicken over a low heat until you obtain a smooth cream .
  4. Once you have obtained the cream, turn off the heat and pour the mixture into the previously oiled glass cup, level the surface, cover with cling film and leave to cool in the refrigerator for 4 hours .
  5. After this time, turn the cake gently onto a plate and serve it by cutting it into slices. If you want you can sprinkle the surface with a little grated coconut!
