270 g flour
100 ml oil (sunflower seeds are also good)
90 ml milk
75 g stevia sweetener (or 150 g regular sugar)
6 g baking powder
4 eggs
1 pinch of salt
Just enough cherries

What you will need to make cream

500 ml milk
50g wheat flour
37g stevia sweetener (or 75g regular sugar)
15ml vanilla extract
4 egg yolks


To make cream

  1. Pour the egg yolks into a bowl, add the stevia sweetener (or sugar) and mix well with a hand whisk.
  2. Now sift the flour and add it in two stages, once you have a smooth mixture, add the milk a little at a time and then the vanilla.
  3. Pour the mixture into a saucepan, turn up the heat, stir continuously, thicken over a low heat, cover with plastic wrap and leave to cool completely.

To make cake

  1. Break the eggs into a bowl, add the salt and stevia (or sugar) and beat with an electric mixer.
  2. When you have reached a frothy consistency, without stopping, add the milk and oil a little at a time, then sift and add the flour along with the baking powder and mix well with a hand whisk.
  3. Once this is done, butter and flour a 25 cm pan, put the dough in it, level it with a spatula, fill it with the cream (a spoonful at a time) and the cherries.
  4. Bake in the preheated oven at 180°C for 30-40 minutes, when done, let the cake cool, sprinkle with icing sugar and serve.
