Olive oil

How to make cream of carrot soup

Wash the vegetables well and peel and cut into pieces the carrots, celery, potato, onion and garlic. In the meantime, pour some oil in a pot and heat it.

When the oil is hot, add the vegetables, the teaspoon of turmeric and a pinch of salt and stir well.

Once the vegetables have softened a little, add the ground ginger, stir well and add the vegetable stock. We bring it to the boil and let it cook for about 10 minutes over medium heat, until the potatoes and carrots are tender.

With a hand blender or in a glass blender we grind everything until we have a smooth and creamy puree, and correct the salt if necessary.

If you like it creamier, you can add a splash of cream and you can serve it with some sunflower or pumpkin seeds, ground cashews or give it an exotic touch with some pomegranate seeds.
