This salad is really excellent as a side dish, although you can also enjoy it as a single dish for a light but tasty dinner. Salad recipe, I prepare it with cabbage and a yogurt sauce: it’s very tasty!
Preparation time: 10 minutes + 6-7 minutes for cooking the eggs
Total time: about 20 minutes
Calories: 200 per serving
400 g of cabbage
3 tablespoons of Greek yogurt
2 tablespoons of olive oil
3 boiled eggs cut into wedges
2 cucumbers cut into pieces
1 bunch of green onion cut into rings
1 teaspoon mustard (optional)
Just enough chopped dill
Just enough salt
- First cut the cabbage with a knife, put it in a bowl, add the chopped cucumbers (raw and peeled), the bunch of sliced spring onions, the chopped dill and the hard-boiled eggs without yolks, cut into wedges and keep aside.
- Mash the egg yolks with a fork in a bowl, add the olive oil, Greek yogurt, mustard and salt and mix to obtain a thick and homogeneous cream.
- Finally, pour the cream into the bowl of your salad, mix everything well with a spoon, then all you have to do is put it on the plates and enjoy.
If you don’t like cabbage very much, you can replace it with another type of lettuce and dress it in the same way.
