Ingredients

300-340 gr of 00 flour
125 gr white yogurt (1 jar)
100 gr stevia sweetener (or alternatively 200 gr regular sugar)
4 eggs
50 ml seed oil
2 unpeeled and sliced apples
50 gr walnuts
40 gr raisins
8 gr baking powder
1 teaspoon vinegar
1 teaspoon of liquid vanilla
Just enough powdered sugar

Preparation

  1. First break the eggs into a bowl, add the pinch of salt, stevia sweetener (or sugar) and vanilla, then beat well with electric whips.
  2. Once the mixture has become light and frothy, add the oil, mix with the whips, incorporate the yogurt and resume working.
  3. Now sift and incorporate the flour, mix with a hand whisk to obtain a smooth and homogeneous consistency, sift and incorporate the baking powder, after which also incorporate the vinegar, vanilla, coarsely chopped walnuts and raisins.
  4. Having done this, pour the batter into a 32×13×7-centimeter pumcake mold lined with special paper and floured, level it and garnish with the unpeeled apple slices.
  5. Finally put to bake in a preheated oven for 35-40 minutes at a temperature of 180°C, when finished dust with powdered sugar.
